Food Services Supervisor

Mid-management class is the working supervisor level of the food service series.

This mid-management class is the working supervisor level of the food services series. Incumbents order food and supplies to meet nutritional guidelines, detainee population count and medical needs within budget limitations. Responsibilities include supervision of County staff and inmate assistants and for ensuring compliance with health and safety regulations and institutional regulations and procedures. Additionally, incumbents personally perform a wide variety of food preparation and facility sanitation duties. This class is distinguished from Food & Support Service Manager in that the latter is a registered dietitian, responsible for planning menus and ensuring compliance with state nutritional guidelines, including the preparation of medical detainee meals for medical or other purposes and the latter’s additional responsibility for the management of the detention facility’s Laundry Services.

Willingness to work off hours, holidays and weekend shifts. Ability to stand for extended periods of time and to lift boxes of food and supplies weighing to 60 pounds. Work is performed in a locked, institutional detention setting, subject to safety considerations from working with inmate staff and in a kitchen setting including exposure to the possibility of burns; wet floors; variable temperatures; electrical hazards; chemical irritants; high levels of noise; and potentially hostile inmates.

Examples Of Duties (Illustrative Only)

Orders all food and supplies required to prepare the menus within limits necessitated by availability, detainee count and budget requirements.
(e.g. Temperature Logs). Deals directly with vendors regarding amount and quality of food provided. Maintains an ongoing and rotating inventory of food and supplies (First In First Out) and enough inventory to comply with emergency preparedness needs.
Plans, schedules, directs and reviews the work of inmate staff assigned to assist with food preparation, service, delivery and clean up. Participates in the selection of County and inmate staff.
Trains County and inmate staff in proper work policies and procedures, inclusive of sanitation, safety and injury prevention training. Directs and participates in the preparation of medical diet and food for facility support staff.
Attends a variety of trade shows to increase knowledge of available products and training and management programs to improve supervisory and management skills.
Includes preparing meat, fish, fowl and other types of protein, fruits and vegetables, breads, pasta and other starches and grains, and desserts and snacks. Uses a variety of large institutional cooking equipment in the preparation and serving of food.
Directs the cleaning and sanitation of and personally performs work related to the cleaning of kitchen facilities and equipment and food preparation and service items following proper safety guidelines. Ensures the safety and security of County and inmate staff. Maintains records of meals served and activities performed in line with Title XV and Serv-Safe regulations. Recommends purchase of equipment for use in the kitchen.
